For those who don't know me, I'm Vicki. I'm a mom to this beautiful princess who brings me joy every single day. We love to have adventures any time we can, and to create memories together. Whether it's going to a museum, visiting the zoo, or having a tea party at home, we look for ways to have fun and explore the world around us. When I have a chance for some "me time", I like to cook, craft (I have a serious Pinterest addiction), watch Netflix, and give time to organizations that support causes close to my heart.

It's almost that time again! Time to get ready for fall, and one of the busiest times of the year. As I sit here trying to decide if it's too early to start decorating with autumn leaves and colors, I can't help but look back on how much fun we've had over the summer.

FAMILY BEACH TRIP Family fun at the Boardwalk in OCMD. We spent the week with family in Bethany Beach, DE and spent the days playing on the beach, visiting the boardwalk, and taking day trips to local attractions. Boardwalk, Ocean City, MD

Last night we decided to do something we don't normally do on a random Wednesday night. We tried a brand new recipe and made muffins from scratch. Aly said that she wanted to try making banana muffins, so I quickly searched Pinterest for an easy recipe that would allow her to do most of the work and we quickly ran to the store for the ingredients.
Once home, Aly and I set about to gathering our baking supplies. For our mini muffins, we only needed a few simple tools to get started.
Tools: Mini Muffin Pan (we also used a mini bundt pan) Fork Spoon or mixing spatula Mixing bowl Measuring cups Measuring spoons
Mini Banana Muffins(Recipe from The Cookin' Chicks) Ingredients: 4 bananas1/3 cup butter, melted1 egg1/2 cup sugar1 tsp vanilla extract1 tsp baking soda1/4 tsp salt1 1/2 cups flour Directions: Preheat oven to 350. Spray your mini muffin pan.Add the bananas to a mixing bowl and mash.Stir in melted butter, egg, sugar, and vanilla….mixing well.
