Weeknight Baking!

Last night we decided to do something we don't normally do on a random Wednesday night.  We tried a brand new recipe and made muffins from scratch.  Aly said that she wanted to try making banana muffins, so I quickly searched Pinterest for an easy recipe that would allow her to do most of the work and we quickly ran to the store for the ingredients.

Once home, Aly and I set about to gathering our baking supplies.  For our mini muffins, we only needed a few simple tools to get started.

Mini Muffin Pan (we also used a mini bundt pan)
Fork
Spoon or mixing spatula
Mixing bowl
Measuring cups

Ready for the oven.  Bake @350 for 10-15 minutes.



Mini Banana Muffins

Ingredients:
  • 4 bananas
  • 1/3 cup butter, melted
  • 1 egg
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups flour

Directions:
  1. Preheat oven to 350. 
  2. Spray your mini muffin pan.
  3. Add the bananas to a mixing bowl and mash.
  4. Stir in melted butter, egg, sugar, and vanilla….mixing well.
  5. Add in baking soda, salt, and flour, stirring until just combined.
  6. Using a spoon, scoop the batter into each mini muffin cup, about 2/3 full.
  7. Once tray is filled, place in oven and bake for about 12-14 minutes.
  8. Remove from oven and allow to cool 1-2 minutes before removing muffins from pan.
  9. Enjoy!

These muffins are simple and delicious. Aly was so proud to be able to make them with little help from me.  And, since they are made with clean ingredients, they are a relatively healthy treat.  We will definitely be making these again! The recipe makes about 35-45 mini muffins, so Aly and I packed some up in snack sized bags to share with all of her friends at daycare.
